مخاطاني البيض

مخاطاني البيض[1] (بالإنجليزية: Ovomucoid)‏ هو بروتين موجود في بياض البيض، وهو مثبط التريبسين مع ثلاث نطاقات بروتينية من عائلة نطاق كازال. [2][3]تتميز تنادد الدجاج وخصوصًا الدجاج الرومي بهذا الشيء. يختلف مخاطاني البيض عن الأوفوموسين. مخاطاني بيض الدجاج (Gal d 1) يُعرف على أنه مُسبب للحساسية، فهو البروتين الأكثر شيوعًا في إحداث حساسية البيض. حُددت ضمنه على الأقل 4 حاتمات للغلوبيولين المناعي هـ.[4] حُددت 3 بروتينات أخرى في بياض البيض تُسبب الحساسية: ألبومين البيض (Gal d 2) وأوفوترانسفيرين (Gal d 3) وليسوزيم (Gal d 4).[5]
